Cheeses

Our exceptional cheeses
On our cheeses trolley at La Table du Centenaire or during a diner at La Terrasse des Beaux Jours, you will discover Virginie Dubois-Dhorme’s cheeses, elected best cheese ripenner of the world in 2021. She defends the local and artisanal production. She likes to work on the product, to do research to find what can improve it, as it is possible to do for a wine.
Oysters

Chloé and Yoan’s oysters from Cap Ferret
Located in Cap Ferret, in the protected environment of the Bassin d’Arcachon, La Kabane, run by Chloé and Yoan, an oyster farming couple, offers oysters of remarkable quality. You will have the pleasure of savouring them at La Terrasse des Beaux Jours throughout the summer.
Dairy products

Dairy products from La Ferme de la Brunie
La Ferme de la Brunie, at the entrance of Sarlat, offers you exceptional dairy and farm products. It is here that we obtain our milk and cream.
They are affiliated with Bleu Blanc Coeur, which ensures that the animals do not take any medication.
Caviar

Caviar from Les Eyzies
La Perle Noire, our caviar, trout and sturgeon supplier, is in Les Eyzies-de-Tayac.
In addition to tasting these in our restaurants’ dishes, you can also visit the aquaculture farm upon reservation.
For this, you can ask the hotel’s reception team.
Geese

Mr Carbonnière’s goose farm
Mr Carbonnière was one of the first people Mathieu Métifet met when he arrived at Le Centenaire.
He immediately won us over with his knowledge and commitment.
All the geese are raised and force-fed on the farm. Depending on the season, you can taste goose breast at La Table du Centenaire.
It is also possible to visit this family farm, located only a few kilometres from the hotel.
